This vegetable has become close to one of my favorites. There are so many options of how it can be used and/or prepared as a binder for dough, in soups, pureed, steamed, etc. Studies show that emerging cauliflower in lots of water takes away some of the nutrients. Again, with any vegetable you don’t want to overcook them as it takes out all the nutrients that we need for our daily vegetable intake. One of the most approved methods for cooking cauliflower would be sautéing. This method allows you to enjoy all the nutrients and bold flavors. I look at Cauliflower as being like a sponge, it attracts flavors very well. For instance, adding a little turmeric or curry to the pan while sautéing kicks it up a notch. To really, get healthy you can sauté cauliflower with a good EVOO or use Earth Balance (dairy/soy free) butter. The best way of all is to create your own vegan butter. Cauliflower is rich in Vitamins C & K and B6; which brings us that added energy that we need daily. It also provides us with the omega-3 fats, fiber, and so many other nutrients as well. There are so many people who don’t eat certain vegetables. I think it may be due to the lack of knowledge of what vegetables bring to enhance our diets. I remember growing up it wasn’t explained to me what the health benefits were to eating cauliflower, my mom just always told me to “Just eat your vegetables”. Even if they were overcooked and soggy sometimes. I hope by reading these blogs my customers will gain more knowledge and be inquisitive to explore more information outside of what is being posted.
